This wine was picked early to retain the natural acidity.
The grapes were chilled, pressed off into older oak on solids and allowed to co-ferment as they warmed up with wild yeast.
The resultant wine shows uplifted lime and and fresh peach aromas, which follow through on the palate, there is also a hint of apricot which should increase as the wine gains age.
Has a wonderful long and minerally finish. Absolutely delighted with this wine.
