This wine is all from Yarra Valley fruit. The fermentation took place in open fermenters and fruit was added over a period of three days to extend the ferment with the cap being plunged three times a day.
The wine was then aged in a combination of new and older French and American Oak for a period of 16 months.
The Wine was bottled in October 2013.
The combination of Cabernet and Merlot gives the wine great complexity. The merlot is quite dominate at the moment and gives attractive plummy flavours in the middle palate.
Whilst this wine shows some cooler climate cabernet characters the main focus of this wine is on rich blackberry flavours with firm tannins on the finish.
The nose of this wine exhibits blackberries and capsicums, the palate is stewed plum, blackberries and a hint of cedar oak- cigar box flavours.
